Smoked Chicken Salad
  • 1whole smoked chicken
  • 3/4cup mayonnaise
  • 1tsp Dijon mustard
  • 1/2cup grapessliced in quarters
  • 1 elery stalkdiced
  • 1/2cup walnutschopped
  • juice of half a lemon
  • 1/4cup dried cherrieschopped
  • 1tsp hot sauce
  • 1tsp kosher salt
  • 1/4tsp freshly cracked black pepper
  1. Starting with your fully cooked, smoked chicken, remove the meat from the bones. Coarsely chop the pulled meat. It should total around 4 cups.
  2. In a large bowl, combine the salad ingredients. Stir. Additional salt and pepper to taste. Enjoy!
