Ingredients
Brown Sugar Bacon
  • 2lbs thick-cut bacon
  • 1/4cup (packed) dark brown sugar
  • 4tsp chipotle chile powder
  • 4tsp smoked paprika
  • 1 1/2tsp kosher salt, divided
  • 1/4cup pure maple syrup
  • 1/4tsp cayenne pepper
BLT
  • 2 1/2Tbsp Dijon mustard
  • 2heads red romaine lettuceseparated into individual leaves
  • 4 beefsteak tomatoessliced ¼-inch thick
  • 16slices your favorite breadtoasted
  • mayonnaise
  • Flaky sea salt, freshly ground pepper
Instructions
Bacon
  1. Place racks in upper and lower thirds of oven; preheat to 400°.
  2. Whisk brown sugar, chile powder, paprika, and 1 tsp. kosher salt in a small bowl.
  3. Whisk maple syrup, mustard, cayenne, and remaining ½ tsp. kosher salt in another small bowl.
  4. Generously sprinkle desired amount with rub or brush with glaze about 5 minutes before it is done cooking. Rub should be melted and bubbling and glaze should look thick and caramelized.
BLT
  1. Arrange bacon on a large platter and serve with lettuce, tomatoes, toast, mayonnaise, Sriracha Mayonnaise, Lemon-Herb Mayonnaise, sea salt, and pepper alongside for building sandwiches.
